    I have a chuck roast in the fridge that I’m gonna smoke today. But I’m not gonna smoke it fully to eat smoked chuck roast, I’m only gonna smoke it for about an hour, to get the smoke flavor, then I’m gonna cut into chunks and make a beef stew. We’ll see how it turns out.

    Great recipe, get a heat diffuser for that Pitboss, Smoke Daddy makes a nice 10 gauge. You have to take it out to seer, but long, low, and slow cooks, she'll heat evenly.

    I would avoid this company. I bought a Timberline series smoker, and after only a few uses, I encountered several issues that couldn't be resolved despite spending hours on the phone. The smoker even caught on fire while it was spotless and clean, making it unsafe to use. I ended up with a lemon from Traeger. When I sought assistance, they refused to help because I was stationed in Japan, promising support once I returned to the States. However, when I got back, they reneged on their promise. I spent a lot of money-don’t make the same mistake I did.

    I prefer the flat side for a total crust. And… have you tried reverse sear, starting temp 250 till the steak has an internal temp of 120f… pull them off, rest will the Grill Grates heat up at 400 grill temp. Then sear each side 1 minute. YMMV.

    Thanks for this .. just got my first charcoal grill about a week ago and learning. I never did much barbeque before even with gas .. that being said I got an anericana walkabout grill. Will this method work with that Grill? I cooked steaks today but came out too well done for me, also cooked with lid down but seeing you let it heat up 1st to 500 and then lid off. Unfortunately mine doesn’t have a thermometer so would have to guess at when it hits 500

    I have a Oklahoma Joe Rider 900. It sounds like i should be cleaning after each use and then deep cleaning the smoker after 3 cooks. Whats the difference between deep clean and what you show in the video?

      Clearing the ash pot is a normal clean out. Deep cleaning is getting out the vacuum and scraping down any grease. Thanks for watching!

    BTW thanks for the video on the burnoff. I did the burnoff to clear it of junk but didnt spray it down with oil to season it like a cast iron pan. I'll be doing that tomorrow.

    I have a Rider DLX 900. It has pretty much everything the 1200 has just smaller. Ive been watching some videos and people are smoking at 185 degrees. The controls on the DLX only go down to 200 i think and then they have LOW. How do i get down to 185 for a slow overnight cook? Is there a video on the DLX control panel?     I got a Pro 780 last week. Is it supposed to smoke a lot right after igniting it? I started following the instruction manual for seasoning but then found this video and shut it down 5 minutes after igniting because it started smoking a ton. Before I restart, want to make sure that’s normal 😬

    Got my dad who’s turning 60 in a few days this model. Really tried to get him the Treager XL but sadly couldn’t afford it for payment plan. He’s an executive chef and had a really bad year last year with his health and job. But things are much better now so I got him this grill because some salesman at Costco sold him on the brand few years back and was all he would fantasize about getting even though with all my thorough research I know you mentioned the camp chef woodwind pro being a bit better. I couldn’t convince him. So got him this model since it’s the cheapest I could somewhat afford just gunna take a long time to pay off. But did all your steps for seasoning and baking and even though I’m a neighbor (Minnesotan) we had horrible rain all day today I managed to luck out and get a dry spell to do the seasoning times and temp increases and all worked out great! Tomorrow being Father’s Day he’ll be doing his first smoke and cook with it which he’s excited. He will be doing a rack of ribs and dry rubbed chicken wings. Great videos! Me and my dad watched a few of them while we waited on the cook times for seasoning. And really enjoyed them. I’m not sure if you’ve done a video on this. But I know other UA-camrs have. But what brand of wood pellets do you tend to prefer? He is new to the pellet grilling scene so trying to be a helpful sous chef or whatever the term is for BBQing lol. Either way he’s excited for his first cook. And loves that he will be able to let it cook and monitor it from his phone since movement is what’s tough for him.

      Did his first cook with ribs and chicken wings today. And 100% love it. The ribs he made turned out amazing! Same with his chicken wings. But the ribs which im normally not a fan of ribs (braces ruined my desire for them) but damn these were good. We even found some sauce at walmart which never thought id recommend something from there but a sauce brand called “Blues Hog” their “Raspberry Chipotle” was amazing to dab with the meat. But meat alone was great as well!

      I have taught them at a young age, you need to work to survive. Everyone has a boss and for now, I am your boss. I started coaching them when they were young so they have me as a dad, boss, and a coach all in one. Makes it hard to argue with me on any matter!!! ha ha But honestly I explain that I have been around the piss pot more than they have, so listen to me or feel my wrath. They are both very hard working young men, either when it comes to work, school, or sports. I guess I owe it all to my dad for raising me with rules but also rewarding when I accomplished things! Not easy being a dad these days but I use the theory of "my way or no way". They are getting older and incredibly busy, but they are up at 6am and that is not really the norm for a 16 and a 17 year old boy but they have goals and responsibilities so if they want to achieve them, they better listen and move faster!!! hahaha Consistency is key!!!     I'm late to the party here, but the drip pan has so much grease on it - do I wipe some of it off with a dry paper towel? I've read mixed things up online - some say it's not necessary, some do?

      After every 3 or 4 cooks, I take it out and scrape it down. If there is a bunch of grease on it after a cook, best to clean it off some so you do not have a grease fire. Thanks for watching!

    Nice comparison! I have the Traeger 780, and I've been very pleased with it. Just made a pork butt today. Like anything, next year Pit Boss, and Traeger will come out with a model with one or three more bells and whistles, and you'll wish you'd waited to buy the latest and greatest. Doesn't matter if it's a pellet grill, Bow, rifle or pistol, car, you name it. The two things I was most disappointed with in my Traeger was, 1. No Super Smoke function. I solved that by buying smoke tubes. 2. The "limited" rack space. Jerkey is one of my main grill items, and 1 and a 1/3 rack kinda blows for jerky making - for making massive amounts at one time that is. Otherwise, I love the Traeger, and I do use the Traeger Wifire, love it! Remote control via my phone = Gnarly Hawgg! 🐖 ❤ 🥓

    Off topic but gotta know your thoughts…. Have you used the new PitBoss Titan? I’m torn between buying it or the Traeger Ironwood XL. Any thoughts on it? It’d really help my decision. Curious about the smoke flavor from one to the other.

      I have not owned a Titan yet so I have to lean towards the Ironwood just because I know that pit runs like a champ! All the Pit Boss models I have had do a good job too but the controllers are not as good IMO. Thanks for watching and sometimes you just need to flip a coin!!

    I'm buying in gluten free pizza crusts for those gluten free people but the doughs are coming out of the overn still very doughy. I've tried to par bake them but am not having much luck Any thoughts?

    To save time just get your local grocery store butcher to slice your round roast (top round, eye of round, bottom round whatever). No need to hand trim or have your own slicer or even a knife. Any BBQ sauce or marinade will work as a marinade.
